Raw onions make you cry and taste sharp. But cook them slowly, and they become amazingly sweet. What's the secret?

Hidden Sweetness

Onions actually contain quite a lot of sugar — about 4-5g per 100g, similar to strawberries! Raw onions don't taste sweet because pungent compounds mask the sweetness.

What Happens During Slow Cooking?

Stage 1: Moisture evaporation (first 10 min) — Water (about 89%) escapes, volume shrinks

Stage 2: Pungency fades (10-20 min) — Heat-sensitive sharp compounds break down, sweetness emerges

Stage 3: Browning (20-45 min) — Sugars caramelize, creating deep sweetness and complex flavors. Volume reduces to about 1/5.

Tips for Perfect Caramelization

  • Cook on low heat (medium burns them!)
  • Stir every 2-3 minutes
  • Add a splash of water when sticking
  • Allow at least 30 minutes

Warning: High heat = burnt onions! Patience is the best seasoning.
